Hi, Dawn! So glad you did find me! You know — you really don’t need the xanthan gum when it comes to brownies, muffins, cakes and flat breads. In fact, I am beginning to eliminate the use of gums in my recipes because of so many people’s sensitivities to them. As for bread and pasta recipes, just substitute xanthan or guar gum with ground flax or chia seeds, using a 1:1 ratio (e.g. 1 Tablespoon xanthan gum = 1 Tablespoon ground flax or chia seeds). It’s an easy swap and you won’t have an upset stomach!
Tammie, I just took a look at my recipes and realized the Coconut Macadamia Apple Bake had a huge flub in it [http://thegspotrevolution.com/?page_id=2546?recipe_id=6000853]! It’s all fixed now, but thank you so much for pointing that out — who knows where my head was that day! If that is the recipe you are referring to, then I would definitely give something like Ener-G Egg Replacer a try. The important part of this recipe is getting that whipped/thickening affect that you would get from adding an egg. Let me know if you give it a try and how it turns out!
Hi! I just found this site today and I thought it was great! I’m trying to go gluten free and eat healthier, but it’s really kind of hard since I’m allergic to most nuts. Is there anything I can use to replace nut flours like almond flour for this baking flour?

My grandson is allergic to tree nuts. Do you have a recipe or sub, for the almond meal in your flours.
I realize you did say flaxseed meal to replace the nut flours, but is there something beside that also.
