So, where as yesterday my hectic schedule left me unable to think about sugar, today I woke up with a SERIOUS craving for something sweet. I don’t know if it was because I was overtired or just my sweet tooth calling for some lovin’, but I decided I had to do something about it.
Instead of throwing the Gluten-Free Sugar Cleanse out the window and eating every ounce of chocolate I could wrap my hands around, I decided to strike a deal with myself. I would indulge my sweet tooth … but only just a little. I still wanted to make something healthy and on the lower end of the sugar side.
So, I wound up with this granola. I halved the usual amount of sweetener I use in my granolas and also decided to nix the addition of extra sweets, like dried fruit. Each 1/4 cup serving contains 5-1/2 grams of sugar …
Half-the-Sugar Almond Butter and Coconut Granola
Cook Time: 25-20 minutes

Ingredients (Twelve 1/4-cup servings)
- 2-1/2 cups gluten-free old fashioned rolled oats
- 1/2 cup quinoa flakes
- 1/3 cup almond butter, warmed
- 1/4 teaspoon sea salt
- 1/2 teaspoon gluten-free vanilla extract
- 1/4 cup pure maple syrup
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon cinnamon
Preheat oven to 300 degrees. Prepare a baking sheet by lining with parchment paper or baking mat (like this). almond butter by scooping into a small, microwave-safe bowl and placing in microwave for about 10 seconds. You may also warm the almond butter in a small pot over low heat, stirring constantly until soft.
In a medium bowl, combine the oats, quinoa flakes, almond butter, salt, vanilla and maple syrup. Stir until ingredients are well-combined. Add the coconut and cinnamon, and stir until mixed thoroughly.
Spread the mixture onto the baking sheet and then bake in oven for 25 – 30 minutes, until golden brown. Stir/toss the granola with a spatula halfway through the bake time.
I had a small bowl of this granola with some almond milk and it hit the spot. I was really glad that I chose to make this instead of what I initially had on mind when I woke up this morning (these cookies for breakfast).
