Who wants a fun and healthy smoothie recipe? Yeah, me too!
I’m not about to go on and on about how much I love pumpkin (there’s a whole post about it for goodness sakes), but I will tell you this: When my friend, Meredith, recently uttered the words pumpkin + Green Monster, I was *bedazzled*.
I mean, let’s face it, she had me with “pumpkin,” but then she went and through a curve ball at me when she coupled it with one of my all-time favorite breakfast smoothies. We were waxing our love for green smoothies when she said, “Have you tried it with pumpkin?”
And I was all, “Whaaaat … ?” and she was all, “Mmmmm, hmmmm.”
SOLD.
It’s seasonal, it’s healthy and filling … it’s pumpkin, people.

Pumpkin Green Monster (naturally gluten-free and vegan)
Ingredients
- 2-3 handfuls of leaf spinach
- 1 to 1-1/2 cups of almond milk (or non-dairy milk of your choice)
- 2 heaping spoonfuls of pure pumpkin puree
- pinch of cinnamon
- 1/2 banana, optional (for a lil’ extra sweetness)
NOTES: I used LIBBY’S 100% Pure Pumpkin.
Directions
Put all ingredients into a high-speed blender and mix thoroughly. Enjoy!

Oh my gosh I made almost this exact smoothie the other day! I actually used 1/2 cup of unsweetened almond milk and 1/2 cup Oregon chai tea for liquids, and added in a little pumpkin pie spice and a splash of vanilla. Pumpkin is such a good smoothie addition!
OH, MY! I now have another smoothie I must try — that sounds heavenly! Thanks for sharing.
